Exotic and aromatic, Moroccan tagines somehow manage to suit all types of weather and not being particularly spicy are relatively simple to pair with wine.

Today, as you’ll probably not need reminding, is le quatorze juillet which marks the storming of the Bastille and the start of the French revolution. These days the French are more likely to head for the beach than onto the streets as it’s a public holiday and the start of the month long summer vacation for many but it’s celebrated with street parties all over France.

Made the first but what certainly won’t be the last of the recipes from @sami_tamimi’s glorious new book Boustany which is about vegetable-based cooking inspired by his homeland of Palestine. It’s the crushed broad beans with goat’s cheese and preserved lemon salsa. Although he makes it with frozen broad beans and peas which makes it a brilliant storecupboard standby I made it with fresh given both are in season - just the perfect taste of summer. Seems so very wrong that his compatriots can’t eat food like this, and in many cases struggle to feed themselves and their families at all. . . . #broadbeans #favabeans #peas #dip #goatscheese #preservedlemon #boustany #samitamimiForget starters and mains!
